It’s one of those Wednesdays that feels like it should be Friday. Woof. I guess that’s what back-to-back holiday short weeks will do to you.
Since it’s Wednesday, it means it’s that time of the week where I tell you all about what I ate in a day. Yes, I’m assuming you care. 😉 I think ‘What I Ate Wednesday‘ is a fun way to show what a day of healthy meals looks like, and also highlight the fact that a healthy lifestyle isn’t always 100% healthy. 80/20, right? I get a lot of meal inspiration from reading other bloggers’ WIAW posts, so hopefully I can provide some inspiration as well.
It seems like baby has been going through a growth spurt the past few days, because I’ve found myself a bit more hungry than usual and overly tired. Instead of snacking, I’ve been trying to fill up on planned healthy meals. Easier said then done when your stomach space is quickly becoming crowded!
My alarm goes off at 6, but I almost never get up immediately. Today it was more like 6:30 when I headed downstairs to grab a cup of hot lemon water and get a head start on some laundry before sitting down with my bible and SheReadsTruth (currently working through John). It was a chilly morning, but we had some beautiful sunrise views!
Once I finished my reading, I prepped breakfast and lunch (both taken to the office with me) and then started on beverage #2: decaf cappuccino.
I put the espresso machine away when I found out I was pregnant, but recently decided I couldn’t go another day without a cappuccino and pulled it out again. I’ve been using decaf grounds, and while it’s not the same as the real deal, it hits the spot for this pregnant woman. 😉 It’s nice to sip on as I get ready throughout the morning, and also gives me something to look forward to on weekend mornings other than decaf tea.
In the office, it was time for breakfast which consisted of my usual yogurt with strawberries, oats and walnuts.
Filling enough to get me through the morning without a snack!
Monday lunch hours are usually spent at the grocery store, so by the time I got back to the office I was more than ready to break out lunch.
I wish it actually looked that nice, but in reality it came from a tupperware container at my desk. Photo credit from dinner the night before. I’m on a mission to use up food that’s been sitting in our pantry, and used up some red lentils in this lentil curry soup. (Recipe to come!) Paired with a side of whole wheat bread, I could barely finish the entire serving. RIP stomach space.
I pushed off my usual ‘dessert’ clementines until later in the afternoon when my stomach finally started to rumble again.
Continuing on operation use up stuff in the pantry, we had a double-squash dinner.
I had a jar of butternut squash pasta sauce leftover from the fall, and decided to pair it with spaghetti squash for another filling meal. Usually, Jim and I can split a medium spaghetti squash for one meal, but both of us had trouble finishing our bowls, which meant I had enough leftovers for lunch. Win!
I did leave enough room for something sweet, and had two raw (vegan) cookie dough balls and a few bites of Jim’s Ben & Jerry’s while catching up on Big Bang and Shark Tank.
We called it an early night since I can’t quite seem to get enough sleep lately. If it’s already a problem now, I’m a little nervous about how things are going to go come April. 😉
