Today’s ‘What I Ate’ post looks a little different from the usual weekday post since I spent Tuesday working from home. Thank you snow!
The fireplace and steady snow made a nice change of scenery!
I started the morning off with a decaf cappuccino and bowl of yogurt while I checked emails and got some work done.
The yogurt was topped with strawberries, walnuts and steel cut oats (soaked in water for a few minutes). I always drizzle some lemon juice and honey over my yogurt bowls for a little flavor!
We spent the morning working from the couch and I finally took a break around noon for some lunch and a little snow day baking. I knew I’d be sneaking some tastes while baking so I kept lunch light with a massaged kale salad, topped with sunflower seeds and nutritional yeast.
I also snacked on some quinoa granola throughout the afternoon.
In between working and baking, I was also able to get some laundry done. Some very tiny laundry!
Is there anything that smells better than clean baby clothes? I still can’t believe there’s going to be someone in these clothes in a few short weeks!
Late-afternoon we took advantage of a break in the snow to take a little walk; shorter than I wanted to, but basically doing high knees while pregnant (the snow is over a foot!) proved to be fairly difficult. Sydney didn’t seem to mind.
Tuesdays are usually running days, so I was glad to get in a little bit of exercise despite the snow. Our short ‘workout’ was enough to work up an appetite, so I dug into the bread that I baked over lunch. Recipe coming next week and I promise it’s worth the wait!
I grabbed a quick shower and got started on dinner before hopping onto a conference call for a little over an hour. Back on the couch, and I was able to check on dinner and have it ready by the end of the call; earlier than it would have been ready if we’d had a regular meeting in person!
After a cold, snowy day, we were both craving soup and Ina’s pappa al pomodoro hit the spot! It’s basically a chunky tomato/veggie soup with ciabatta bread crumbs whisked right into the broth while it cooks. I can tell I’m losing stomach room because I was stuffed halfway through a normal bowl.
The rest of our snow day was spent back on the couch (apparently we don’t move much on snow days!) watching Planet Earth, typing up this post and enjoying baby kicks.
Now that we’ve finally had a snow day for the year, I’m ready for spring!
