Loaded with all of the best pizza toppings like mushrooms, onions and pepperoni, this Pizza Soup is sure to be a family favorite!
I hated pizza as a kid. As in, wanted nothing to do with it. I liked cheese. Liked bread. Loved tomatoes. Pizza? No way.
Funny enough, Pizza Hut was one of my favorite restaurants. Not for the pizza, but I was obsessed with the salad bar. And no, I wasn’t some crazy healthy-nut kid. The toppings selection on the Pizza Hut salad bar is what I went for. A few pieces of lettuce and tons of toppings, finished off with several generous globs of french dressing. It was heaven, I’m telling you.
Back to the pizza. I actually remember when I decided to make myself like pizza. In middle school everyone walked to a local pizza shop Friday afternoons before football games, and of course ordered slices of pizza. Not one to be left out, I figured it was time to get over my pizza phobia, or at least pretend. Yes, peer pressure led me to pizza.
Of course once I actually tried it I was hooked, and now pizza is easily one of my favorites. Especially if it’s got a ton of toppings… goat cheese and fig, garlic and arugula, veggies and fresh mozarella. I guess there’s still a little of that salad bar kid in there somewhere.
So now that you know more about my history with pizza than you ever cared to know, let’s get to the recipe that isn’t really pizza at all. It’s a soup. Pizza soup. And if you like pizza, you’re going to like this soup!
Just like the real thing, this soup is packed with all of the best pizza toppings (mushrooms, onions, pepperoni, mozzarella) and still manages to be pretty healthy. It’s easy to throw together on a busy weeknight, and would also be fun for a party; set out a toppings bar and let everyone add their own!
And while my kid isn’t old enough to verify this, take it from a former pizza-hating kid- I think this meal will be a hit with the little ones, too. 😉
