Hello! Anyone else wake up today wishing it was Friday? (That would be a yes for anyone reading, I’ll assume.) We’ve got warm weather on the horizon and I can’t wait to spend all day Saturday in my garden. Greens and onions are going in! Fresh salads straight from the garden are calling my name.
Before we get to the weekend though, I’ve got a recipe that I think you’re going to love. This one can maybe be filed under “Easiest Recipe Ever”, if I had such a category. You can bet that a few minutes of my Saturday morning will be spent whipping up this recipe before I head for the dirt. So let’s get to the recipe, and hope that the weekend is here before we know it!
If it isn’t evident from the nature of this blog, I love to cook. I’m one of those people who actually find it relaxing to camp out in the kitchen for hours on end, making recipe after recipe. (Although I’m happy to leave the dishes for someone else!)
I’m always experimenting with new dinner recipes and when I have the time, I like to come up with new and exciting salads, soups or bowls for lunch as well. Breakfast seems the area where I come up short. Throughout the work week I stick to a few staples and on the weekends I might branch out with a new oatmeal recipe or avocado toast. I tend to wake up hungry, so breakfast needs to be ready ASAP!
That’s where these blender muffins come in. They do require some bake time, but the prep work couldn’t be faster or easier. Simply toss all of the ingredients into the blender and pour the batter into muffin cups. I almost couldn’t believe that the recipe worked; it’s that easy!
I’ve been grabbing a muffin or two on my way out the door in the morning, and they’re a welcome change from my usual go-to breakfasts. I think they’d be a big hit with the kids too! I love that the ingredients are clean and the muffins are low-sugar while still being plenty sweet thanks to the ripe bananas.
New go-to breakfast? I think so!
