My go-to for an easy lunch, this Mediterranean quinoa salad makes several portions to use throughout the week and combines a vegetarian protein option with greens,veggies and healthy fats for a well-rounded meal.
This recipe was supposed to go up last week, but life (and work) got the best of me and it just didn’t happen. Now that I’ve got a major project behind me, I’ve got a few weeks yet to catch up and take a deep breath before Chickpea makes his or her debut! (20 days, actually, if the little one is more punctual than his/her mom!)
I’ve found that in the last few weeks of pregnancy, my taste buds a little off. Nothing sounds especially appealing and I’d honestly be ok with cereal for pretty much every meal. To keep that from happening, I’ve been turning to some tried and true favorites that can be made in bulk and used throughout the week. I really don’t even feel like cooking, plus standing in the kitchen for long periods of time tends to bring on a pretty intense backache, so the shorter the recipe the better!
This quinoa salad is exactly the type of recipe I’ve been turning to these days. Minimal ingredients, short prep time, and it makes several portions at once. I like to make it for dinner knowing that I’ll get at least two lunches out of the leftovers.
As a little refresher, quinoa is like the ultimate super food. It’s technically a seed, but is prepared and eaten like a grain, packs 8 grams of protein, and is one of the few plant foods that contain all nine essential amino acids. I ate a lot of quinoa during the first trimester when meat was a complete turn-off. Looking for more quinoa recipes? This particular quinoa salad is probably my favorite quinoa recipe, and I’ve found that it’s a universal crowd-pleaser. If you’re not an olive fan, they can totally be emitted from the recipe. If you do like them though, toss a little bit of the juice into the salad for a unique taste!
