I’ve been on a mission the past few weeks to spend less on groceries and utilize what we have in our pantry. I find myself stocking up on ‘essentials’, only to let them sit on a shelf for weeks on end. Anyone else?
So before I make my grocery list, I’ve been taking inventory of the pantry shelves to see what I can utilize in a recipe. It’s a little tricky sometimes to match random ingredients to a recipe, but it’s also been a fun kitchen ‘challenge’ for the past few weeks. I think it might even be helping to improve my cooking skills since I have to do some improvising to make the recipe work.
Last week, in an effort to use up a few bags of lentils that have been staring me down for longer than I’d care to admit, I came across a lentil soup recipe in one of my favorite cookbooks. Since I had most of the ingredients on hand it seemed like a no brainer. I had to make a few substitutions to fit the ingredients I was working with, but the end result is absolutely headed towards my go-to recipe list.
I’ll be honest, Jim was more than skeptical when he saw this soup coming together, but he agreed that the finished product was a definite winner. I paired it with a slice of my whole wheat bread and the slightly sweet bread was a nice contrast to the spicy soup! (Try it with a glass of riesling and let me know how it pairs!)
With the bread and soup combined, this is a super filling meal. I look leftovers to work last week and had a hard time finishing my bowl for lunch.
