These marinated chicken fajitas come together in under 30 minutes for an easy weeknight meal perfect for a family, group of friends, or even an easy dinner party!
The weather’s getting warmer and fingers crossed there’s no more snow on the horizon. I’m just about ready to break out my sandals and sundresses, and I’m hoping that Chickpea will be here before my favorite spring ‘holiday’- Cinco de Mayo! Few things sound better right now than an icy margarita on the patio. (Right up there with prosecco, sauvignon blanc and maybe even a beer. #priorities)
And speaking of Cinco de Mayo, I’ve got an easy weeknight meal to share that doubles as the perfect recipe if you’re planning a party on May 5. It falls on a Friday this year, so there’s really no reason not to celebrate. (Unless I’m still pregnant, in which case I’ll probably still be making this recipe and sipping on a virgin margarita while pleading with the baby to vacate my stomach.)
These chicken fajitas are my all-time favorite meal! Ever since I was a kid, this dish has been my request for my birthday dinner. The great new is- it’s so easy to prepare that Jim has been able to take over making my birthday meal with some guidance from my mom!
The chicken can be prepared in the morning and left in the fridge to marinate throughout the day. When you get home from work, all you have to do is saute the chicken, onions and peppers and prepare the toppings (another step that can be done ahead of time). Everyone makes their own plate, so just serve all of the ingredients on a large platter or in separate bowls. I like the one plate option; less clean up!
I listed my favorite toppings, but you can also include black beans, cilantro rice, corn or corn salsa, additional fresh veggies and more! And of course, I always serve this dish with a bowl of corn chips and guacamole and salsa on the side. And margaritas, duh! (This recipe is a good one!)
