The past week was full of celebrating (July 4 then Jim’s 30th birthday) and great food, so my meal plan for this week is all about simple and healthy! Luckily, there’s no better time for fresh, healthy, easy meals than the middle of summer.
Honestly, I could eat the caprese salad pictured above every night from June to August. 😉 But I doubt my husband would go for that and our tomatoes aren’t quite ready yet, so here’s what I’m planning for this week (find a shopping list at the bottom of this post).
Tuesday- Broccoli Quinoa Casserole
Wednesday- Pesto Mustard Salmon and Brussels Sprout Salad
Thursday- Pizza Spaghetti Pie via PaleOMG (adding mushrooms to ours!)
Friday- Off to the cabin for the weekend with my family! I’m in charge of breakfast, and I’ll be making this casserole ahead of time.

I try to plan dinners that will make 4 servings, leaving us with leftover lunches to pack for work. Breakfast usually consists of a smoothie, yogurt bowl or oats ( or Frosted Flakes for Jim).
