Well, the Super Bowl definitely got the best of me. I had no doubt that I’d be in bed before the end and instead I was still on the couch hooked to the TV when it finally ended. I have to admit, it was a great ending, and that’s coming from someone who had no stake in the game, whatsoever. Hopefully I make it through Monday without needing a nap!
The weekend was a pretty low-key and relaxing. We kicked things off Friday night with a birthday dinner at my favorite restaurant. Although I didn’t get to take advantage of the wine list, I made up for it with some pretty incredible food!
We always start with the calamari (in some kind of incredible pepper sauce).
For my entree, I chose a crab cake on top of butternut squash risotto with a beet vinaigrette sauce. Amazing.
I stopped myself halfway through my entree because of course no birthday dinner would be complete without dessert! This chocolate orange flourless cake seemed like the only way to go. Topped with a chocolate chip sugar cookie, obviously.
Needless to say, we left stuffed!
Saturday was spend working on a freelance project (more about that here!) and running some errands. We had a low-key night in and I made homemade pizzas while Jim and my brother installed a new faucet in the kitchen sink. Nothing makes you feel 30 like a Saturday night spent doing DIY projects… At least I now have a shiny new faucet that doesn’t leak!
I opted for my usual white pizza (with truffle oil) topped with an arugula salad.
Sunday was more of the same, working on a design project and doing a little cooking before some friends joined us for the Super Bowl.
After a week of birthday treats and a weekend filled with more good food, I’m more than ready to clean up our meals and get things back on track this week! I’m definitely feeling a little sluggish and am looking forward to some light, fresh meals and lots of walking and yoga to help me feel more like myself (or as much like myself as someone can feel at 28 weeks pregnant).
Here’s what’s on the menu this week!
Pineapple Shrimp Stir-Fry: I’m definitely in a warm weather state of mind, despite the temperatures outside. This dish fits right in and makes me think of somewhere tropical. Tip: Cook rice and prepare shrimp during your weekly prep to save time.
Sweet Potato Bacon Turkey Burgers: These burgers are delicious and I like to make a few extra to use as lunches on top of salad throughout the week. Tip: I’m skipping the sauce to keep things light this week!
Egg Stir Fry: No recipe to share. Just scramble an egg and sautee veggies of choice, then add some brown rice to the pan for an easy, one-pan meal. Tip: Cook your rice for this dish along with the rice for Monday’s recipe when you’re doing prep for the week, and keep it all in a large tupperware container until you’re ready to use.
Quinoa Casserole with Broccoli & Cheese: This casserole is a sneaky way to get a good serving of veggies and protein disguised as a creamy comfort food. Tip: One batch definitely makes enough leftovers for a few lunches.
Spaghetti Squash with Red Sauce: A healthy spin on a “date night” meal! I like to make my own red sauce with canned Italian plum tomatoes, fresh basil, a little red wine, garlic and onion, but store-bought sauce works just as well for an easier option! Adding shrimp is a fun twist. Tip: The spaghetti squash takes about 45 minutes to bake before it’s ready to serve, so plan ahead or do this in advance and reheat when you’re ready to serve.
