Another weekend that went way too fast. Seems like that’s always the case. Our weekend was pretty low-key, and in fact, except for church and grabbing Saturday night take-out, we didn’t leave the house. 😉
Not leaving the house was partially due to my catching some kind of sinus infection/head cold, which I’ve found is even more miserable when pregnant. All of the recommendations on pregnancy-safe medications have been generally confusing and contradictory, so I decided to avoid pretty much all OTC medications unless I’m at ‘absolutely dying’ on a scale of 1-10. Haven’t reached that point yet, so I’m pushing through med-free.
In lieu of meds, I’ve been looking to natural cold remedies: healthy eating (minus a vinegar chip incident yesterday), light workouts, saline solution, guzzling water, and getting lots of vitamin C! Lucky for me, tis the season for c. 🙂
I had to keep myself from breaking into a happy dance in the middle of the grocery store when I spotted the clementines. The question is, will one bag make it through the week? My bets are ‘no’.
Grapefruit is another current obsession, and I’ve been squeezing greens into every meal possible for a little extra boost of c. Avocado toast with a side of arugula tossed in lemon juice and olive oil: quickest lunch ever!
In case you’re wondering, a cup of arugula has 3mg of vitamin c; 4% of the recommended daily value. Greens for the win!
And speaking of greens, last night we brought back our all-time favorite winter salad.
The lighting is unfortunate (RIP daylight past 5 p.m.) but trust me, this salad is a winner! The recipe is from Pinch of Yum (go check out her original post for pictures that do this salad justice), and features a mix of wild rice, pomegranate seeds, walnuts and feta over kale with a red onion vinaigrette. I literally just finished the leftovers from last night and I’m considering running back out to the store for ingredients to make it again. 😉 We decided that this is going on the weekly menu until future notice.
Side note: if you’re looking for the perfect salad for Thanksgiving dinner, I’d suggest this one! You can even prep it ahead of time and toss with dressing just before serving.
