There are few things better than a fresh veggie going from garden to your belly in under 5 minutes. That’s what this Garden Green Smoothie is all about!
A smoothie is one of the easiest, fastest, and most nutritious way to start the day, and the addition of greens packs an additional nutritional punch. I vary this recipe with whatever greens I have on hand; on this particular day the mix included baby kale leaves, beet greens and some fresh garden mint. Kale and beet greens are easily found year-round (they’re cold-weather lovers), but on a hot summer day, the mint is key.
About those beet greens…
I noticed that we have some red beets ready to be used ASAP, but I hated to see those beautiful leaves to go to waste. Beet greens are actually the most nutrient-rich part of the plant; full of iron, calcium and magnesium. They make a great addition to a smoothie, and can also be sauteed or used as a salad base.

Garden Green Smoothie
1 handful kale and beet greens (or greens of choice)
1 sprig mint
1 scoop protein powder of choice ( I used SunWarrior, natural flavor)
1/2 cup plain yogurt
1 tbsp chia seeds
1/2-1 cup coconut water (enough to get things moving!)
Blend all ingredients together; serve chilled!
