We’re quickly closing in on the start of what’s sure to be a perfect holiday weekend! A perfect weather forecast, friends visiting from out-of-town, and a few fun events on the books. The only downer: how is it already July 4 weekend? As usual, this summer is flying by!
Since this blog focuses mostly on food and recipes, this Friday series will give a little glimpse into what else is going on throughout the week, from what I’m currently loving, to workouts, to pictures that didn’t make the blog (mostly of Sydney). So here’s my five from this week:
We’ve been having the best summer weather lately! Not too, too hot; not miserably humid; windows-open temps at night. We have been taking advantage by cramming in as many outdoor activities as possible: golf, tennis, and of course, running.
Jim got me a set of golf clubs for our anniversary last week, so we’ve been putting them to good use and hit the golf course twice last weekend; 9 holes just the two of us, and 18 with my sister and brother-in-law. Looking forward to getting out again tomorrow!
In addition to golf, we got back out on the tennis courts last night, and I’ve been logging a few 3-4 mile runs per week. It feels so good to keep ourselves active and fall into bed exhausted at night.
I’ve been on a one-pot meal kick this week! This probably has something to do with #1; spending as much time outdoors as possible leaves a little less time in the kitchen. Preparing a meal in one dish is a huge time saver, and forces me to get a little creative.
This week I’ve made Chicken Broccoli Casserole with a healthy twist (pictured above; I”ll share the recipe next week!) and Pizza Spaghetti Pie from PaleOMG. Both have earned a spot in the weekly rotation!
For breakfast, I’ve been on a huge smoothie kick. Some with greens, some with just fruit, but all using Sunwarrior and half a cup of whole milk yogurt for a big protein boost! I ordered the Sunwarrior Classic Plus in natural last week, and I’m really liking it so far! The natural flavor is easy to blend into any flavors I’ve come up with so far, and doesn’t leave me with an overpowering ‘protein shake’ taste or texture.
That’s what happens when you’re late for work. Don’t worry, I scooped it back into my cup with a spatula.
I need to do some work on the garden over the weekend. I made time to catch up with the weeding this past week, but the majority of my greens are starting to bolt. RIP arugula. Since this is my favorite and most-used section of the garden, I need to come up with a new plan for the remainder of the summer.
Most greens (kale, arugula, spinach) prefer cooler temps, so I may need to find some alternative to get me through August before replanting my favorite greens for the fall. Any suggestions?
4. Wish List
I’m currently lusting over this bed from Pottery Barn…
…but can’t deal with the price tag. So I’m on the hunt for a lookalike, or someone to gift me a major Pottery Barn coupon.
Wine was on my wish list last week, but I was able to cross that one off this week when I found one of my favorites on sale. Perfect timing for the holiday weekend, no? Sauvignon Blanc, specifically those from Marlborough, New Zealand, is my favorite wine, and Nobilo is a great choice.
I also found a set of acrylic wine glasses on sale at Target, so now we’re set for crabs on the patio Sunday night! Nice wine glasses & Old Bay don’t play well.
