This week has been a long one, especially since we’ve experienced all four seasons in a matter of days. We literally went from 65 and sunny to 25 and snowy in less than 24 hours. I’m usually a winter weather fan- the more snow the better- but I’m definitely ready for spring! Luckily, it looks like we’re going to get close to the 60s again this weekend so I won’t have too long to wait.
Before we get to the weekend, here’s what I’ve been loving this week…
One: Kale Smoothie
During the warmer part of the week I hopped back on the smoothie for breakfast train and used up the rest of a bag of kale I had in the fridge. I totally forgot how much I LOVE a kale smoothie in the morning!
If you’re new to green smoothies, kale might be a big step. I suggest starting with a few handfuls of spinach; I promise you’ll never taste it! My basic recipe:
- 1-2 handfuls spinach or kale
- 1 banana
- 1 cup milk (cow’s milk is great, so is almond milk)
- 1 tbsp chia seeds
- dash cinnamon
- Optional: hemp seeds, nut butter, vanilla extract (or use vanilla almond milk), frozen berries
- several ice cubes
Blend it all together and you’ve got the perfect green breakfast! A tip: the kale blends a lot better if it’s been lightly steamed. I just pop it in the microwave for 30 seconds before blending.
Two: New Site Design
Hopefully you’ve noticed the new layout here on Dirt to Delish! Jim’s was away for work all week, so I spent a few nights working on a redesign to make the site a little fresher and easier to navigate. Some people Netflix binge when they’re bored, some people write code.
Speaking of site design, I’ve been managing a few sites in addition to this one for awhile now and decided that I really needed more on my plate (ha!) so I’ve been working on designing a few new sites in my free time. Currently, I’m working on a site for a health coach that I’m really excited about! If you know a small business, independent consultant, coach or organization that needs help with web design, social media or online newsletters, send them my way!
Three: Cookie Dough Bites
I’ve mentioned these before and I’m sure this won’t be the last time. These raw cookie dough bites by OhSheGlows have been a life (and waist) saver during my sweet tooth stage of pregnancy. Every night I’m able to eat a perfectly healthy meal, usually a salad, but afterwards I find myself craving a little something sweet. Enter the cookie dough bites! They taste exactly like cookie dough, minus the raw eggs (pregnancy friendly), butter, sugar and other not-so-healthy ingredients.
Unfortunately, the exact recipe that I use is from the OhSheGlows Cookbook and can’t be found online, but this one is similar! (The cookbook version uses peanut butter instead of the raw nuts.) I’ll likely be making another batch this weekend, so if I do I’ll snap some photos and share the recipe next week!
Earlier in the week I was able to take advantage of the warmer temps and longer daylight (come on spring!) and Sydney and I made it out for a few runs for the first time in awhile! As long as I take it slow, I’ve been able to do about a mile of running (more like jogging) before switching to walking another 2 miles or so. We’ll see how long that lasts! It’s definitely a different experience running with the extra belly.
On the down side, most of my workout clothes are firmly in the ‘no longer fit’ part of my closet- there’s not much left on the ‘fits’ side- and I refuse to spend money on more maternity clothes than absolutely necessary. So I’ve been raiding Jim’s closet. Not sure what I’m going to do if his clothes get snug! The good news is that my favorite Lulu leggings are still going strong and are working well with the bump. Whether you’re pregnant or not, these leggings are definitely worth the splurge! I have both the crops and the pants in the high-rise and love how they support the belly.
