I’m changing up the format of my Friday 5 posts! From here on out, these posts will include a roundup of 5 different recipes, kitchen gadgets, workouts, healthy tips, wines… you get the picture. 😉 I thought this would be a fun way to share what I’m loving, but in a way that delivers a little more inspiration than the previous format (more of a ‘lately’ post).
Today I’m rounding up my 5 favorite summer salads; the key here is quick, easy, healthy and fresh! I love salads that can be thrown together using all of the fresh summer vegetables (and fruits) I have on hand. The less ingredients, the better! 😉

1. Caprese Salad
My all-time favorite, I SO look forward to August when the tomatoes are in peak season here in Central PA. I hit up the farmers market or a local cheese shop to pick up a fresh ball of mozzarella, and use the basil from my garden or window pot. (Grow it inside year-round!)
Slice the tomatoes and mozzarella and alternate with large basil leaves. A drizzle of really good olive oil and balsamic vinegar (just call me Ina), and you’re done!
Ingredients: tomato, mozzarella, basil, olive oil, balsamic vinegar
I’ve used this recipe from Eat Live Run over and over again for summer picnics and parties, and it’s always a hit! I love to use fresh corn straight off the cob (see this recipe if you do too!), and can often pick it up at a stand down the road from our house. *Note- I’ve subbed pineapple for the mango, and it’s just as good, if not better! 🙂
Ingredients: sweet corn, bell pepper, red onion, jalapeno, black beans, mango or pineapple, lime, olive oil, cumin
3. Watermelon & Arugula Salad
This recipe is on a constant rotation in my kitchen as well, and it can be ready in under 2 minutes! The sweet watermelon and peppery arugula are a great combination, and the addition of cheese makes the dish (I use feta or goat cheese). You don’t even need a dressing- just drizzle with olive oil and call it a day!
Ingredients: watermelon, arugula, feta or goat cheese, olive oil, salt & pepper
4. Wedge Salad
This is a favorite of my mother-in-law’s, and it’s the perfect salad to serve with steak off the grill. What is more summery than grilling? I found this fun recipe for serving your wedge salad on a stick, and I’m anxious to try it out soon!
Ingredients: iceberg lettuce, tomatoes, bacon, blue cheese crumbles, blue cheese dressing
5. Greek Tabbouleh Salad
I posted this recipe yesterday, and it’s a good one! Before I discovered freekeh, I was making a similar version of this salad with quinoa. The lemon dressing has a ‘bright’ taste that pairs with the fresh veggies to give this salad a great summery taste.
Ingredients: freekeh or quinoa, kale, cucumber, tomato, scallions, kalamata olives, lemons, olive oil, garlic, oregano
