As much as I love to cook, some nights I’m just not feeling it. A long day at work, hot muggy weather, a
real housewives marathon… (just me? 😉 ) Sometimes spending the night in the kitchen is the cure for whatever’s going on, and some nights it’s the last place I want to be.
Last night was one of those nights. The workday wasn’t bad at all, but a busy weekend packed with fun events left me with some catch up to do. Cleaning, laundry, boring adult stuff. I spent the evening getting caught up, and when I finally finished I was not up for another hour in the kitchen.
But… just because I’m not up for a long night of cooking doesn’t mean I don’t want a great meal. That’s when some easy weeknight recipes come into play.
I thought it would be fun to start a series of recipes that aren’t even really recipes; just easy, great tasting weeknight meals that come together quickly with minimal dishes and very little cleanup. Sound good?
Easy Weeknight Recipe: Pesto Salmon Filet
This easy weeknight recipe comes together in five quick steps in under 20 minutes with just one dirty dish.
Step 1: Pre-heat oven to 425.
Step 2: Mix 2 tbsp pesto and 2 tbsp stone ground mustard.
Step 3: Spread pesto mustard mix over filet of salmon (double for two portions, etc.)
Step 4: Wrap salmon in foil, making a ‘packet’.
Step 5: Bake for 10 minutes. Unwrap and bake for additional 3 minutes. Serve immediately.
My favorite side dish for this salmon is arugula tossed with lemon juice and olive oil. Toss it directly on the plate to save another dish!
