I don’t usually plan our meals around a theme, but somehow Thursdays have become our “Mexican” night. Originally, it was just a good excuse to make a batch of margs and stuff our faces with guac, but unfotunately that kind of thing catches up with you. 😉 So my new thing to do is to come up with a healthy twist for our fajitas, taco bowls, quesadillas, etc.
I’ve been on a quesadilla kick lately, so tonight was the fourth Mexican Thursday in a row that has featured the ‘dillas! I kept things light by filling half of my plate with a salad fresh from the garden…
Couldn’t help cutting a few hydrangeas!
I tossed the salad with a light drizzle of oil, squeeze of half a lemon and half a lime, and a pinch of sea salt, then topped with half of a leftover tomato.
For the quesadilla, I’ve been using low-carb oat & flax Let’s Skip the Sandwich wraps that I threw in my grocery cart on a whim. I LOVE them! They’re so much better than some other ‘healthier’ wraps I’ve tried that can taste a little cardboard-ish.
I only had one left in this pack, so half a quesadilla it was. I made up for it by using extra cheese. 🙂
Along with the melty cheese, I added a few pieces of arugula that I kept out of the salad. The bitey greens were a perfect addition! And half the quac completed the plate. Since I can quickly turn into a guac monster and consume the whole batch, I’ve been keeping us to one avocado worth of guacamole to share!
Some other ideas to ‘lighten’ up Mexican night:
- In lieu of the margarita, squeeze some lime and orange juice into sparkling water. OR, opt for a skinny marg by using tequila, lime juice, a splash of cointrau and optional tsp of agave.
- Skip the wrap and make a fajita bowl or salad, a la Chipoltle. Layer rice or beans, chicken, and cheese over a big bed of lettuce, onoins and bell peppers.
- Pass on the chips and pair sliced veggies with your guacamole or salsa.
After Work Workout
I made friends with the snooze button this morning since we were out last night celebrating our anniversary, so I was in for an evening workout tonight. I’ve been on a roll with morning workouts, and tonight’s run reminded me why I need to make the morning workouts happen! Aside from the heat and humidity, it’s so nice to get a workout out of the way before I’m fully awake!
I finally pushed myself out the door around 6:30 and did a slow 3 mile run, followed with a short half-mile walk with Jim and Sydney before dinner.
We’re planning a fun weekend ‘stay-cation’ instead of going away for our 3rd anniversary, starting off with a dinner date after work, so the morning workout is defintely going to happen tomorrow!
